วัตถุประสงค์ของวิชาการ PHT 631
1. เพื่อให้ นศ. ได้รับความรู้พื้นฐานเกี่ยวกับเมล็ดพืชอาหารในกลุ่มธัญพืช และพืชตระกูลถั่ว 2. เพื่อให้ นศ. ได้รับความรู้และงานวิจัยใหม่ ๆ ด้านเมล็ดพืชอาหาร 3. เพื่อให้ นศ. ได้เรียนรู้ระบบการจัดการหลังการเก็บเกี่ยวเมล็ดธัญพืช และเมล็ดพืชตระกูลถั่ว 4 . เพื่อให้ นศ. นำความรู้ที่ได้ไปจัดการหลังการเก็บเกี่ยวเมล็ดธัญพืช และเมล็ดพืชตระกูลถั่วอย่างมีประสิทธิภาพ 5. นำความรู้ที่ได้ไปปรับใช้กับสถานการณ์ต่าง ๆ

Definition of postharvest handling system of cereal grains and grain legumes
An appropriated system that need for handling grains to keep their high quality and quantity and to reduce loss and waste till they are used as proper aspects.

คำจำกัดความ 1. Grain หมายถึง “เมล็ดพืชอาหาร” นำไปบริโภค
2. Seed หมายถึง “เมล็ดพันธุ์พืช” ใช้ในการขยายพันธุ์ 3. Cereal หมายถึง เมล็ดธัญญาหาร เมล็ดพืชอาหารที่ให้สารอาหารคาร์โบไฮเดรตเป็นหลัก (แป้ง) เช่น ข้าว ข้าวโพด ข้าวสาลี ข้าวฟ่าง ข้าวไรน์ และ ข้าวบาร์เลย์

เนื่องจากเมล็ดพืชเป็นสิ่งที่มีชีวิต เกิดความสูญเสียทั้งด้านปริมาณ และคุณภาพ ภายหลังการเก็บเกี่ยว - กระบวนการจัดการ เช่น การเก็บเกี่ยว การอบแห้ง การสี การทำความสะอาด - ขบวนการทางชีวเคมีต่าง ๆ ภายในเมล็ดพืช - สภาพแวดล้อม - ศัตรูโรงเก็บ เช่น แมลง นก หนู เชื้อจุลินทรีย์
